Our Pastry
Our pastry program is built on the same principles that have built our bakery’s success over the past 30 years.
We are committed to using wholesome ingredients that are better for you, better for the planet, and which just taste better. Our pastries are made with regenerative, whole grain flours from Cairnspring Mills and Tehachapi Grain Project, and produce from our local Santa Monica Farmer’s Market.

The Tehachapi Heritage Grain Project's aim is to preserve and grow
heritage, non-GMO organic grains which are naturally drought-tolerant and low in gluten. These heirloom grains were traditionally grown in California, and are well suited to our climate and soil. Tehachapi is growing a diverse group of grains that offer both health benefits and unique flavor to our bakers.
